Private charters are just that and they can cost a lot $600+. Most of the party boats are right around 80 bucks for 3-5 hour only you will have to share your space with strangers but everyone is usually having a good time. But schools. A lot of schools on ocean waters or close - Have marine courses where the kids go out and tag the fish. If you have a boat... You could take yourself. I used to ask the school in Grand Isle (sort of) where the trout where... In return, I'd call them if I were catching a bunch, and give them my GPS coordinates... They'd come and tag some fish...
